Back in the kitchen yet again! Let’s face it, I enjoy cooking, but detest washing the dishes after. I love finding new things to experiment with and I got to thank PINTERST for that. As a quick meal for after work or school I decided on shrimp for the meat; with a simple search and there were so many options. HONEY ORANGE FIRECRACKER SHRIMP spiked my interest and taste buds.

1 1/2 Pounds Shrimp
Seasonings (Black pepper, salt, garlic and onion powder)

Hey Guys!!

Hope all is well. Since I’ve been home quite a bit due to my sick leave, I’ve had more time to be in the kitchen *also since my mom is away*. This week we wanted to try something different from our usual spread, so we remembered something my mom used to do in the past. TWICE BAKED POTATO ~ it’s easy and fun to make, because you can add all the things you’d want on a regular Baked/Loaded Potato.

Hey Guys!!

This past Sunday took us a little south of the island in search of some good food.
The first place we went to was closed, so we quickly decided on a second option which was relatively close by. It also happened to be my first time being at this restaurant.

The general atmosphere was very relaxing and more than expected when entering first. There’s a wide variety of seating available and we opted for upstairs which had the open view of the sea.

In My Kitchen // Summer Smoothie

Ya’ll know what time it is by now!

SUMMER!!!

It also happens to be mango season, so you know what’s one of the main ingredients in this smoothie.

This was really a quick fix since I was in the mood for something to “cool me down”. We also have an abundance of mangoes because we have a tree in our yard.

My sister and I usually create milkshakes with ice-cream, ice, milk and voila. However, tonight I decided to spice things up.

Ingredients:

Mangoes
Coconut Ice-cream
Milk
Ice

It’s really that simple. Toss everything into the blender and the result is a nice cool-me-down drink. Who knew coconut and mango made such a great combination?

BTW – next weekend happens to be a Mango Festival, maybe I’ll drop by and share some of it with you guys!

So, last Saturday while grocery shopping the idea of tacos came to mind. It’s been something I’ve wanted to do for some time now but always forgot. Well, finally I did it. This concoction was simply me going off the top of my head, so a few things may be missing.

Ingredients

  • Soft Taco Shells
  • *seasonings for meat*
  • Chicken Breast
  • Steak
  • Sweet Pepper
  • Onion
  • Garlic
  • Shredded Cheese
  • Lettuce
  • Sour Cream

In My Kitchen // Creamy Chicken Meatballs

Hey Guys!!

Hope you had a great week, but guess what….
I’m finally back in the kitchen!

This meal was inspired by my craving for creamy pasta and my wants for something different to eat. If you checked out my other food related posts (Meatballs Take 2 , A Twist on “Meatballs”) you’ll see that meatballs aren’t new to me. Therefore I decided instead of a marinara sauce I was going to try a creamy cheesy sauce. This time I also popped my meatballs into the oven instead of frying them *but I think I left them a little bit too long, or the texture is just different since it’s chicken.*

Power Breakfast Recipe

Good Morning Guys!!

Some days are so hectic that you don’t have time to grab breakfast or maybe you’re just not in the mood for solid food. Well here’s a recipe for one of my favorite breakfast shakes; this was go-to back in college when I had to dash out of the house.

It’s simple and easy to make. Basically putting all the ingredients into the blender and voila! This shake is also filled with protein, so not only will it help you feel energized but it would (should) keep you filled till lunch.

#Blogmas Day 2: Cheesecake Recipe

Hey Guyysss!!

So apart from my Sunday adventures I also decided to whip up something in the kitchen. I’ve been known to bake cheesecakes for quite some time now, and well its also been awhile.

Ingredients:

3 packages (8 ounces) cream cheese
3 eggs
3/4 cups white sugar
1 tbsp lemon juice
1 tbsp vanilla essence
1/8 cup all-purpose flour
1/8 cup heavy whipping cream

Preheat Oven to 375 degrees
*I purchased a premade graham cracker crust*
Soften cream cheese in a large bowl
Add eggs one at a time and combine
Add remaining ingredients and blend until smooth
Pour into pan and bake for 1 hr
Let cake cool then refrigerate overnight.

In My Kitchen // Banana Bread

Guess who’s back! It’s been awhile since I lasted posted and also since I’ve been in the kitchen. So here I am with another concoction that I whipped up last night.

I present to you Banana Bread with Craisins. Weirdly enough I’m obsessed with craisins, but I hate raisins; silly right? Well Cranberries vs Raisins, lol.

Ingredients

2-3 overly ripe bananas
1/3 cup melted butter
1 tsp baking soda
Pinch of salt
3/4 cup brown sugar
1 egg, beaten
1 tsp vanilla extract
2 tsp cinnamon
1/2 cup craisins
1 1/2 cups all-purpose flour

Method

Preheat oven to 350 F
Butter 4×8 inch loaf pan
Mash ripe bananas
Stir in melted butter
Mix in baking soda and salt
Stir in sugar, egg, extract, cinnamon, craisins
Mix in flour
Pour batter into pan
*As an extra I drizzled honey over the top*
Bake 50 mins – 1 hr
