In My Kitchen // Creamy Chicken Meatballs

Hey Guys!!

Hope you had a great week, but guess what….
I’m finally back in the kitchen!

This meal was inspired by my craving for creamy pasta and my wants for something different to eat. If you checked out my other food related posts (Meatballs Take 2 , A Twist on โ€œMeatballsโ€) you’ll see that meatballs aren’t new to me. Therefore I decided instead of a marinara sauce I was going to try a creamy cheesy sauce. This time I also popped my meatballs into the oven instead of frying them *but I think I left them a little bit too long, or the texture is just different since it’s chicken.*

Power Breakfast Recipe

Good Morning Guys!!

Some days are so hectic that you don’t have time to grab breakfast or maybe you’re just not in the mood for solid food. Well here’s a recipe for one of my favorite breakfast shakes; this was go-to back in college when I had to dash out of the house.

It’s simple and easy to make. Basically putting all the ingredients into the blender and voila! This shake is also filled with protein, so not only will it help you feel energized but it would (should) keep you filled till lunch.

#Blogmas Day 2: Cheesecake Recipe

Hey Guyysss!!

So apart from my Sunday adventures I also decided to whip up something in the kitchen. I’ve been known to bake cheesecakes for quite some time now, and well its also been awhile.

Ingredients:

3 packages (8 ounces) cream cheese
3 eggs
3/4 cups white sugar
1 tbsp lemon juice
1 tbsp vanilla essence
1/8 cup all-purpose flour
1/8 cup heavy whipping cream

Preheat Oven to 375 degrees
*I purchased a premade graham cracker crust*
Soften cream cheese in a large bowl
Add eggs one at a time and combine
Add remaining ingredients and blend until smooth
Pour into pan and bake for 1 hr
Let cake cool then refrigerate overnight.

What are some of your favorite desserts for the season?

In My Kitchen // Banana Bread

banana-bread

Guess who’s back! It’s been awhile since I lasted posted and also since I’ve been in the kitchen. So here I am with another concoction that I whipped up last night.

I present to you Banana Bread with Craisins. Weirdly enough I’m obsessed with craisins, but I hate raisins; silly right? Well Cranberries vs Raisins, lol.

Snackin’ // Cinnamon Roll Waffles

Hey Guys!!

What are you snackin’ on today?

Cinnamon rolls are always a go-to especially Pillsbury Cinnamon Rolls; all you have to do is pop open the can, separate the rolls and pop ’em in the oven.

Well, I decided to do something a little different that I may have seen on Pinterest. Instead of popping the rolls into the oven I placed them on my waffle maker and voila!

Yum! This is an awesome quick snack if you feel for something sweet or maybe a dessert later on in the night.

Have you tried to cook anything else in a waffle maker?
I did (here) Lol

Local Food // Caribbean Style

“Local” – relating or restricted to a particular area or one’s neighborhood

For this week’s Daily Post Photo Challenge was ‘Local’; they asked us to show what home means to us, and where our hearts lay. The first thing I could think of when I heard the word ‘local’ was FOOD.

Food in the Caribbean is VERY different to that of America and other places around the world. Of course each island has something different that they specialize in, howeverย regionally we carry almost the same products.

As mentioned in a previous post (In my Kitchen // Roast Whole Chickenย ) Sunday dinners are usually a big thing, but so is breakfast.

Let’s just say Sundays are for plenty cooking.

In my Kitchen // Roast Whole Chicken

Heyyyy Guys!!

Guess who’s back in the kitchen?? This chica!

My “Sunday Funday”ย started out with me slaving over a stove, then relaxing on a beach with a cold beer.

I almost forgot what it’s like cooking a whole Sunday dinner then having to clean up after; it’s awful, but worth it. I decided on a roast whole chicken, macaroni pie, rice, and coleslaw. Continue reading “In my Kitchen // Roast Whole Chicken”

In My Kitchen // Seafood Pasta

Now ya’ll know I live for a good pasta, especially seafood *well mostly shrimp*. However this one had in the whole works; calamari, octopus, scallops and shrimp. Only thing missing was lobster *sigh*.

This dish wasn’t all me….Okay it was mainly my mom BUT I helped!

Looks good right? Well, it tastes just as good!

Ingredients include frozen seafood mix, cream of mushroom, Mozzarella cheese, Parmesan cheese, white wine, whipping cream and of course sweet peppers, onions, parsley etc.

Don’t gotta go out all the time to enjoy good food, this one came straight from my kitchen without an excessive bill.
Yay me!

Explore SoFlo, Take 2

Ali, Ali, Ali the explorer!
Grab your backpacks!

Vamonos!

So after I showed my mom how I spent one of my last days she ended up calling me explorer. Which resulted in me thinking of ย Dora, the explorer hence the opening (lol I’m lame like that).

Anyway part two of my series (and sadly the last for a while) “Explore SoFlo” includes me going bike riding along Hollywood beach boardwalk, visiting BurgerFi and Ben & Jerry’s. It may just be my very first fun-filled day, and I was so close to canceling on my friend. Everything was last-minute and basically planned by me googling stuff to do in the area. (S/O to Google!)
