In My Kitchen // Summer Smoothie

Ya’ll know what time it is by now!


It also happens to be mango season, so you know what’s one of the main ingredients in this smoothie.

This was really a quick fix since I was in the mood for something to “cool me down”. We also have an abundance of mangoes because we have a tree in our yard.

My sister and I usually create milkshakes with ice-cream, ice, milk and voila. However, tonight I decided to spice things up.


Coconut Ice-cream

It’s really that simple. Toss everything into the blender and the result is a nice cool-me-down drink. Who knew coconut and mango made such a great combination?

BTW – next weekend happens to be a Mango Festival, maybe I’ll drop by and share some of it with you guys!

Hey Guys!

So, last Saturday while grocery shopping the idea of tacos came to mind. It’s been something I’ve wanted to do for some time now but always forgot. Well, finally I did it. This concoction was simply me going off the top of my head, so a few things may be missing.


  • Soft Taco Shells
  • *seasonings for meat*
  • Chicken Breast
  • Steak
  • Sweet Pepper
  • Onion
  • Garlic
  • Shredded Cheese
  • Lettuce
  • Sour Cream

In My Kitchen // Creamy Chicken Meatballs

Hey Guys!!

Hope you had a great week, but guess what….
I’m finally back in the kitchen!

This meal was inspired by my craving for creamy pasta and my wants for something different to eat. If you checked out my other food related posts (Meatballs Take 2 , A Twist on “Meatballs”) you’ll see that meatballs aren’t new to me. Therefore I decided instead of a marinara sauce I was going to try a creamy cheesy sauce. This time I also popped my meatballs into the oven instead of frying them *but I think I left them a little bit too long, or the texture is just different since it’s chicken.*

In My Kitchen // Banana Bread


Guess who’s back! It’s been awhile since I lasted posted and also since I’ve been in the kitchen. So here I am with another concoction that I whipped up last night.

I present to you Banana Bread with Craisins. Weirdly enough I’m obsessed with craisins, but I hate raisins; silly right? Well Cranberries vs Raisins, lol.



2-3 overly ripe bananas
1/3 cup melted butter
1 tsp baking soda
Pinch of salt
3/4 cup brown sugar
1 egg, beaten
1 tsp vanilla extract
2 tsp cinnamon
1/2 cup craisins
1 1/2 cups all-purpose flour


Preheat oven to 350 F
Butter 4×8 inch loaf pan
Mash ripe bananas
Stir in melted butter
Mix in baking soda and salt
Stir in sugar, egg, extract, cinnamon, craisins
Mix in flour
Pour batter into pan
*As an extra I drizzled honey over the top*
Bake 50 mins – 1 hr

Snackin’ // Cinnamon Roll Waffles

Hey Guys!!

What are you snackin’ on today?

Cinnamon rolls are always a go-to especially Pillsbury Cinnamon Rolls; all you have to do is pop open the can, separate the rolls and pop ’em in the oven.

Well, I decided to do something a little different that I may have seen on Pinterest. Instead of popping the rolls into the oven I placed them on my waffle maker and voila!


Yum! This is an awesome quick snack if you feel for something sweet or maybe a dessert later on in the night.

In my Kitchen // Roast Whole Chicken

Heyyyy Guys!!

Guess who’s back in the kitchen?? This chica!

My “Sunday Funday” started out with me slaving over a stove, then relaxing on a beach with a cold beer.

I almost forgot what it’s like cooking a whole Sunday dinner then having to clean up after; it’s awful, but worth it. I decided on a roast whole chicken, macaroni pie, rice, and coleslaw. Continue reading “In my Kitchen // Roast Whole Chicken”

In My Kitchen // Seafood Pasta

Now ya’ll know I live for a good pasta, especially seafood *well mostly shrimp*. However this one had in the whole works; calamari, octopus, scallops and shrimp. Only thing missing was lobster *sigh*.

This dish wasn’t all me….Okay it was mainly my mom BUT I helped!

Looks good right? Well, it tastes just as good!

Ingredients include frozen seafood mix, cream of mushroom, Mozzarella cheese, Parmesan cheese, white wine, whipping cream and of course sweet peppers, onions, parsley etc.

Don’t gotta go out all the time to enjoy good food, this one came straight from my kitchen without an excessive bill.
Yay me!

What’s Cooking?

After eating meat all week I was in the mood for seafood today. More specifically pasta, since I haven’t had any in almost three weeks. Pasta was like my go to dish in college, so to go three weeks without is a big deal. Unfortunately I was missing a few ingredients at home, so I had to walk to the store before I could start. My plan at first was to have a simple shrimp pasta, but then I found lobster tails in the freezer and couldn’t resist.

Nothing fancy just basic ingredients:
– Mostaccioli Pasta
– Parmesan Cheese
– Half & Half
– Shrimp/Lobster
– Italian Seasoning
– Parsley
– Black Pepper/Salt
– Broccoli, Red Peppers
– Olive Oil

To kill two birds with one stone, and also because I didn’t take as much pictures I’ll also post a meal I made last week.


First off the fried rice is from Trader Joe’s and it is BOMB.COM. Of course I made the vegetables myself, as well as the salmon (which was awesome). Basically seasoned the salmon put it in foil with some butter, and tossed it in the oven. In about 15-20 mins it was done.

Pancake Time

Hey Guys!!

So I bought some bananas the last time I went grocery shopping, and well I’m not a fan of eating bananas just like that. I used some to make fritters (Caribbean thing) awhile back, but today I just used the others to make Strawberry Banana Pancakes. Think I got my fair share of fruits plus breakfast calories in one.

Let’s just say they turned out pretty awesome, but I did them the lazy way (not completely from scratch).


Yum! Happy Tummy. Ya’ll should give it a try. What else do you guys mix in your pancakes for an extra kick?
