Good Vibes at Ana’s

Hey Guys!!

We’re already in the third week of May which means that SUMMER is close. My motto for this year is “Good Vibes Only“; no time for “bad vibes” or anything negative.

One of my good friends came home to Antigua for the week and before he left I wanted to spend a little time with him. We went out on Friday for drinks and other shenanigans then decided to chill on Saturday for lunch.

After much deliberation we settled for Ana’s on the Beach.

In My Kitchen // Creamy Chicken Meatballs

Hey Guys!!

Hope you had a great week, but guess what….
I’m finally back in the kitchen!

This meal was inspired by my craving for creamy pasta and my wants for something different to eat. If you checked out my other food related posts (Meatballs Take 2 , A Twist on β€œMeatballs”) you’ll see that meatballs aren’t new to me. Therefore I decided instead of a marinara sauce I was going to try a creamy cheesy sauce. This time I also popped my meatballs into the oven instead of frying them *but I think I left them a little bit too long, or the texture is just different since it’s chicken.*

Power Breakfast Recipe

Good Morning Guys!!

Some days are so hectic that you don’t have time to grab breakfast or maybe you’re just not in the mood for solid food. Well here’s a recipe for one of my favorite breakfast shakes; this was go-to back in college when I had to dash out of the house.

It’s simple and easy to make. Basically putting all the ingredients into the blender and voila! This shake is also filled with protein, so not only will it help you feel energized but it would (should) keep you filled till lunch.

Cutie’s for Lunch

Finally some fooooood. It’s been a long while since I had a food related post; let’s face it no one takes me out *lol* and I haven’t been in a cooking mood lately. Anyway, last Saturday in between shenanigans my girls and I went out for lunch.

Ti, my best friend suggested this new joint in town called Cutie’s (apparently that’s the owner’s name). Of course I agreed, cuz hey I’m all in for trying new spots. Lunch for us was around 12:30 after we finished walking through town. One of our other friends joined us because we were planning to meet up later for the rest of our shenanigans (my new word btw). #Blogmas Day 2: Cheesecake Recipe

Hey Guyysss!!

So apart from my Sunday adventures I also decided to whip up something in the kitchen. I’ve been known to bake cheesecakes for quite some time now, and well its also been awhile.

Ingredients:

3 packages (8 ounces) cream cheese
3 eggs
3/4 cups white sugar
1 tbsp lemon juice
1 tbsp vanilla essence
1/8 cup all-purpose flour
1/8 cup heavy whipping cream

Preheat Oven to 375 degrees
*I purchased a premade graham cracker crust*
Soften cream cheese in a large bowl
Add eggs one at a time and combine
Add remaining ingredients and blend until smooth
Pour into pan and bake for 1 hr
Let cake cool then refrigerate overnight.

Lunch Shenanigans

Hope everyone is having an enjoyable weekend thus far.

In case you didn’t know shawty (me) got a JOB! A legit job and one along the fields of what I studied. Next week would complete my first month, and I must say time definitely flew but it’s been good. So for the last friday of every month my supervisor normally treats his staff, which is normally seven people including himself. As a continuing tradition they choose somewhere new to experience; I’m very happy for this because it has been a goal of mine to tryout new restaurants around the island.

For this week their choice was C&C Wine House.

This wasn’t my first time going there as I previously tried it during the summer. However I decided to go with it and try something different from the menu. It was a Friday afternoon and I wasn’t particularly in the mood for any heavy food, so I settled on Fried Chicken Wings and French Fries.

What I loved about this was the way in which they plated the food. I found the setup nice and different by using the conical-shaped basket for the fries. The wings were also tasteful and well seasoned; the sauce pictured in the basket is a passion fruit sauce which made everything even better. I can’t recall the name of the wine we were drinking, but it was a mixture between dry and sweet. It’s also from South Africa and after two glasses I was good.

It’s a nice little chill spot to grab a bite or relax and sip wine with a couple of friends. Also, on the plus side it’s located in the heart of the town, so you can explore the city as well as walk on the boardwalk where cruise ships dock.

In My Kitchen // Banana Bread

Guess who’s back! It’s been awhile since I lasted posted and also since I’ve been in the kitchen. So here I am with another concoction that I whipped up last night.

I present to you Banana Bread with Craisins. Weirdly enough I’m obsessed with craisins, but I hate raisins; silly right? Well Cranberries vs Raisins, lol.

Ingredients

2-3 overly ripe bananas
1/3 cup melted butter
1 tsp baking soda
Pinch of salt
3/4 cup brown sugar
1 egg, beaten
1 tsp vanilla extract
2 tsp cinnamon
1/2 cup craisins
1 1/2 cups all-purpose flour

Method

Preheat oven to 350 F
Butter 4×8 inch loaf pan
Mash ripe bananas
Stir in melted butter
Mix in baking soda and salt
Stir in sugar, egg, extract, cinnamon, craisins
Mix in flour
Pour batter into pan
*As an extra I drizzled honey over the top*
Bake 50 mins – 1 hr

Snackin’ // Cinnamon Roll Waffles

Hey Guys!!

What are you snackin’ on today?

Cinnamon rolls are always a go-to especially Pillsbury Cinnamon Rolls; all you have to do is pop open the can, separate the rolls and pop ’em in the oven.

Well, I decided to do something a little different that I may have seen on Pinterest. Instead of popping the rolls into the oven I placed them on my waffle maker and voila!

Yum! This is an awesome quick snack if you feel for something sweet or maybe a dessert later on in the night.

Local Food // Caribbean Style

“Local” – relating or restricted to a particular area or one’s neighborhood

For this week’s Daily Post Photo Challenge was ‘Local’; they asked us to show what home means to us, and where our hearts lay. The first thing I could think of when I heard the word ‘local’ was FOOD.

Food in the Caribbean is VERY different to that of America and other places around the world. Of course each island has something different that they specialize in, howeverΒ regionally we carry almost the same products.

As mentioned in a previous post (In my Kitchen // Roast Whole ChickenΒ ) Sunday dinners are usually a big thing, but so is breakfast.

Let’s just say Sundays are for plenty cooking.
